Shimeji

Shimeji is an edible mushroom native to East Asia. It should always be cooked to overcome the natural bitter taste of the mushroom. The cooked mushroom has a pleasant, firm, slightly crunchy texture and a slightly nutty flavor. It goes well with wild game, seafood, in stews, soups and sauces.
