Plaintain banana

The Plaintain Banana is often used for cooking. It is firmer and lower in sugar content than a dessert banana and is used either when green or under-ripe (and therefore starchy) or overripe (and therefore sweet). The Plaintain Banana is used in a lot of South American dishes; it can also be dried into flour or fried into chips. The flowers can be used in salads and the leaves as plates.
