Eddo

Eddo or Taro belongs to the family of yams. It grows well in paddy fields or soil that is watered by rainfall or irrigation. The plant can be up to 2 m in height.

The corm is white, grey, pink brown or blue purple and contains 25% of starch. The corms can be cooked, baked or fried and used in soups, cakes, puddings and stews. A popular snack made with Eddo is tarochips.
