Asparagus - Green
Green Asparagus spears are harvested after they emerge through the soil from the underground crowns. Typically, spears are cut when they reach approximately 23cm (9 in.) in height. Stalk diameter is not a good indicator of proper maturity and associated tenderness. Quality, fresh asparagus will be dark green and firm with tightly closed, compact tips. Stalks are straight, tender and glossy in appearance. Contrary to white asparagus, green asparagus does not need to be peeled.
Since asparagus originates in maritime habitats, it thrives in soils that are too saline for normal weeds to grow in. 'Crowns' are planted in Winter, and the first shoots appear in Spring. Peru is currently the world's leading asparagus exporter, followed by China and Mexico.
